We are seeking an experienced and ambitious Chef De Cuisine. This is an excellent opportunity to support the delivery of an outstanding commercial culinary offer across multiple units, your chance to lead and develop a large culinary team, and to help us live and breathe our passion for culinary excellence.  

Key responsibilities:

You will be Responsible for:

  • Ensuring the consistent delivery of a fantastic commercial culinary food service offer across multiple units
  • Ensuring that our food service offer is compliant with our agreed standards of excellence
  • Leading, managing and supporting a high performing culinary team 
  • Acting as an advocate to drive cultural change in ensuring the highest of safety standards in all areas

Food Service Delivery:

  • Ensuring we deliver an excellent, consistent food service experience across all units
  • Oversee the compliant delivery of rotational menus, special events and hospitality requests
  • Ensuring our production, administration and service processes are consistently compliant
  • Support the creation of strategic, commercially viable recommendations that are innovative, identifying future trend led opportunities
  • Support the delivery of our strategic plan for the development of health and wellbeing food service provision that is both commercial and meets changing customer needs
  • Lead the implementation of sales driving activity and initiatives
  • Ensure our work areas are consistently of the highest standards of cleanliness and safety

Culinary Leadership:

  • Lead and inspire team members across all roles and all levels
  • Deliver a culture of Food and Workplace Safety as an advocate, with excellent personal behaviours
  • Motivate, train and develop our culinary team to deliver delicious, nutritious food with an excellent customer experience
  • Manage the performance of the culinary team, ensuring all required training has been completed, correctly documented and delivers cultural change
  • Ensure delivery of a consistent customer experience with front of house chef presence across all services
  • Deliver proactive labour management which drives efficiency, whilst maintaining consistent service standards
  • Working in a team producing high end and high-quality food
  • Developing and supporting team members
  • Supporting in the creation of exciting menu concepts
  • Adhere to H&S and F&H standards
  • Stock taking and ordering of stock
  • Deputise in the Head Chefs absence
  • Catering for customers daily

Essential:

  • City & Guilds 706/1 & 2 or NVQ equivalent/similar qualification
  • Experience of leading a successful team
  • Experience in a CDC role at a similar level
  • Demonstrate innovation and strategic direction in food planning and menu development
  • Good people skills
  • Passion about food and customer service
  • Experience of menu planning
  • Knowledge of working to a budget and achieving GP

Desirable:

  • Experience in a similar environment
  • Food Hygiene Certificate
  • High standards and quality driven
  • A ‘can do’ attitude
